A Strawberrylicious Recipe To Celebrate the Start of Strawberry Season

The Best Chocolate Strawberry Mousse Cake You've Ever Had!

So what's in store for your taste buds? How about strawberries and chocolate? That's exactly what this recipe delivers.

First, let's gather the ingredients:

2 pints of fresh strawberry halves, stemmed
2 1/2 cups divided whipping cream
2 cups of chocolate chips
1 cup of graham cracker crumbs
1/2 cup water
3 tablespoons of melted butter
2 tablespoons light corn syrup
1 tablespoon sugar

Creating Heaven

Now that you've got together the ingredients (most of which are delicious in their own right) it's time to put it all together to create a masterpiece.

First we're going to create our crust. To do this, take the graham cracker crumbs and mix them into the butter and press the mixture into the bottom of a 9-inch springform pan. Then take the strawberry halves and stand them up, side to side, (creating a fence-like structure) with the cut end of the strawberries pressed against the cake pan.

Now take your water and corn syrup and mix them into a sauce pan, bringing the mixture to a boil. Put your chocolate chips and this mixture into a blender and blend until smooth. Then, as the chocolate is cooling, beat 1 and 1/2 cups of the the whipping cream until stiff peaks form. Fold the chocolate mixture into the whipping cream and pour the mixture into the pan with the crust and the strawberries. Cover the dessert and refrigerate for 24 hours.

Prior to serving the dessert, take the rest of the whipping cream and beat till stiff peaks form. Add the sugar. Pipe the cream mixture onto the top of the cake (after it has been removed from the pan). Your masterpiece is ready to serve.
