Aunt Midge's Secret Blackberry Mousse Recipe

A Blackberry Mousse Recipe The Whole Family Will Love

She didn't want me to do it at first, but then she relented... Aunt Midge is letting me share her secret blackberry mousse recipe with the world. If you've been looking for a dessert recipe the entire family will beg for, you're in for a treat.

Gathering The Ingredients

The first step to making Aunt Midge's secret blackberry mousse recipe is gathering the secret ingredients. Surprisingly, there's nothing really secretive in this dessert. Most of us berry lovers have this stuff in our kitchen already. That being said, here's what you need:

2 and 1/4 cups (packed) fresh blackberries
1 and a half cups whipping cream
1/3 cup sugar
1/4 cup water
1 envelope unflavored gelatin
2 egg whites (preferably natural free range or organic)
2 tablespoons water (cold)

Making The Mousse

First soften the gelatin in the two tablespoons of cold water and set it aside. Once that is out of the way, take 2 cups of the blackberries and puree them in a food processor. Then strain the berries through a strainer to remove the seeds.

In a medium-sized saucepan, take the 1/4 of a cup water and the blackberry puree along with the cup sugar and bring the mixture to a simmer. Let it simmer for 5 minutes and then mix the gelatin into it. Then remove from heat.

Now take the egg whites and beat them until they become stiff. Fold these into the berry mixture. Beat the cream until stiff peaks form and fold that into the berry mixture as well. Now pour the mousse into six small dessert dishes and chill in the refrigerator for at least four hours. Once the blackberry mousse has chilled, garnish with the remaining 1/4 cups blackberries, serve and enjoy!
