Everybody Loves Classic Berry Recipes!

Making desserts with berries is a classic and delicious summer pastime. Berries are sweet and add flavor and vibrant color to cakes, pies, and as toppings or preserves. Best of all, quick and impressive dishes can be whipped up with relative ease, giving the impression that you put a lot of effort into creating a masterpiece, when you just whipped it up shortly before the meal (or before company arrived!).

Don't Have The Time To Bake?

If you only have 20 minutes or less to create your dessert, opt for a pre-baked base. For a delicious tart, have some individual-size sweet tart shells or graham cracker crusts on hand. Beat 8oz of whipped cream cheese, 1/4c powdered sugar and 2Tbspb amaretto together in a bowl. Spoon the cream cheese mixture into the shells and top with your favorite berry - raspberries, blueberries, sliced strawberries - and sprinkle with some more powdered sugar. These tarts are beautiful and delicious!

Have A Little More Time To Prep?

This recipe for blueberry pie still uses refrigerated pie crusts but requires a little more preparation time. In a bowl, mix 3/4c sugar, 3Tbsp cornstarch, 1/4tsp salt and 1/2tsp ground cinnamon. Sprinkle this mixture over 4c blueberries. Line a pie dish with one crust, and pour the berries into the dish evenly. Top evenly with dabs of butter (1Tbsp total).

Cut the other pie crust into 1/2in strips and layer them over the dish, creating a lattice pattern. Use a fork to press the crusts together at the edges of the dish. Bake the pie at 425°F on the bottom rack of the oven, for about 50min until the pie filling is bubbly and the crust is a golden brown. Brushing melted butter over the crust a few minutes before the pie is done baking will add shine to the pie.
