Some Great Cranberry Treat Ideas

As the autumn chill hits the air, it does not necessarily mean the end of delicious berry treats thanks to these cranberry recipes. Try them both this week to see which is your favorite!

Cranberry Tartlets

This easy, kid-approved desert will add flavor and color to your dessert menu. To begin, beat 1 ½ cups cranberry sauce (canned or homemade) until its smooth, and set it aside to settle. Then, beat the contents of a 15 ounce can of pumpkin, 2 pints slightly softened vanilla ice cream, and 2 teaspoons pumpkin pie spice in a bowl with an electric mixer until it is well-blended and smooth. Place it in the freezer for 20 minutes if it is too soft to form a mound.

Pour 1 tablespoon cranberry sauce in the bottom of each of 12 mini graham cracker pie shells. Then, fill the pie shells with the pumpkin ice cream mixture. Freeze until they are firm, and then store lightly covered or in a plastic bag until you are ready to serve them.

To serve them, remove the filled pie shells from the freezer and allow them to warm until they are slightly softened. Drizzle them with cranberry sauce, dried sweetened cranberries and whipped cream. Top each with a mint leaf. Beautiful and delicious!

Tart CranApple Pie

If you're looking for a new twist on an old favorite, consider adding cranberries to an apple pie. In a bowl, mix 4 cups peeled and sliced apples, 2 cups whole cranberries, ¾ cup brown sugar, ½ cup sugar, 1/3 cup flour and 1 teaspoon cinnamon.

Once it is well-mixed, pour it into a pie pan lined with a pie crust. Top the pie with another crust and crimp the edges. Cut several slits in the upper crust.

Bake the pie at 425°F for 50 minutes, until the crust is a golden brown and the filling is hot and bubbly. After the pie is somewhat cool, slice and top with whipped cream. A tart way to enjoy your favorite apple pie!
