Not all carbs are created equal and breads made with whole grains really are healthy for you and aren't your enemy at all. That's why this whole grain blackberry muffin recipe is great for those who want to stick to a low glycemic diet.
What You Need
To make these yummy, yet healthy blackberry muffins you'll need to gather some ingredients. Here's your shopping list...
1 Cup Whole Wheat Flour
1 Cup Fresh Blackberries (Preferably Home Grown or Organic)
1 Cup Quick Oats (Preferably Organic)
1 Cup Water
1/2 Cup Honey (Preferably Organic)
1/2 Raisins (Preferably Organic)
1/2 Cup Chopped Pecans
1/3 Cup Presser Expelled Sunflower Oil
1/4 Wheat Germ
3 Free Range Eggs
1 Tablespoon Baking Powder
Making Muffins
Now that you have your ingredients together, it's time to start baking. First, mix your baking powder, oats and flour together in a mixing bowl. Then mix the liquids in followed by the blackberries, nuts, raisins and wheat germ.
Take out the muffin tins and spray them with all-natural cooking spray (Wolfgang Puck makes a great one). Pour the mixture evenly into the tins and bake at 400 degrees for 30 minutes. Let the muffins cool (you can serve them warm with a healthy butter alternative such as Brummel and Brown) and enjoy!
